Custom Iron Kirituke Style Knife:

The custom Kirituke style chef knives features a clean and tapered handle design. The profile of the handles allows for a confident "pinch grip" and will provide hours of comfortable use. The handle is made from a beautiful piece of desert ironwood burl. The full tang construction makes the knife feel extremely durable in the hand. 

The fire twist high-carbon damascus steel was forged and finished by our skilled team. The high-carbon steel blade will allow for easy resharpening and great edge retention. This high quality damascus steel blade will keep your cuts clean and crisp. Every knife is backed by the Schenk Knives "Razorlife Warranty"; bringing you peace of mind and confidence in the product.

The leather slip cover has been hand stamped by our team of leather artisans. The cover is made from 8 oz. brown-dyed bridle leather that comes from one of the oldest tanneries in America, Wickett & Craig, USA. The sheath is accented with white thread which brings the knife and sheath into perfect balance. Each knife and sheath is flawlessly hand-crafted by the artisans at Schenk Knives in Idaho Falls, ID.

What is a Kiritsuke Style Knife?

Kiritsuke Double Bevel Edge (kiritsuke Gyuto)
The lightweight, double bevel edged Kiritsuke might be compared to a combination of the Nakiri and the Sujihiki. It is a very versatile knife that can be used to perform many of the tasks normally done with a Gyuto. The double bevel edged Kiritsuke is available in a variety of different styles, ranging from knives with a blade profile identical to the singe bevel edged Kiritsuke, tall rectangular versions that look like a long Nakiri with a ‘reverse tanto’ tip / ‘clipped point’, and knives which look like a combination of Kiritsuke and Gyuto. All of these types of Kiritsuke have less blade curvature / ‘belly’ than the the typical Gyuto, making them less ideal for ‘rock chopping’, but better suited to ‘push cutting’ and ‘pull cutting’. However, a similar result to ‘rock chopping’ can be achieved by using the tip of the blade with a series of ‘pull cuts', or ‘back slices’, if you make a subsequent second series of cuts at 90 degrees to the first. *Just like all things, proper care should be given to the knife blade. We recommend cleaning with warm water and completely drying after use. We recommend applying food grade mineral oil to the blade an handle immediately after drying to help preserve the blade. Always clean and oil your knife before extended storage. Never store your knife in the leather sheath for extended time periods.
